Smoked Snapper, Papaya & Puhoi Valley Cow's Milk Feta Salad, Kaffir Lime Crème Fraiche

It's our favourite fish like you've never tried before with full-on falvour including Puhoi Valley Cow's Milk Feta. Geoff Scott treats you with his recipe on Best of NZ Food.
There is nothing better than the smoky sweetness of a freshly smoked snapper. Add in a little fresh fruit and salty feta and you’ve got a stunning combination of flavours.
I like to use smoked snapper most of all, but trevally, kahawai, hot smoked salmon are all excellent in this salad, Serve this on a large plater or if you are putting on a special dinner party, then serve individual salads in glass tumblers or dressed individual plates.
Ingredients
2 cups flaked smoked snapper, be careful to remove all the bones, scales and any dark brown flesh
3 cups cooked baby potatoes, sliced
1 cup papaya, diced
1 cup celery, I prefer peeled to remove the strings, then slant cut
190gr Puhoi Valley Cows Milk Feta
½ cup fresh coriander leaves
To Make
Arrange all the salad ingredients on a platter or individual plates.
Dot the kaffir lime dressing over the salad and garnish with extra coriander leaves.
Kaffir Lime Dressing
1 cup crème fraiche
3 fresh kaffir lime leaves, very finely chopped - almost to a powder
a pinch of fine salt
Mix all the dressing ingredients together well and allow to infuse.
