The Foodstore Chefs: Sliders with House Made Ketchup

A Delicious offereing from Wylie Dean for the mince competition on The Foodstore Chefs.


1T dry yeast
1.5c tepid water
4.5c bread flour
6T sugar
3T non fat dry milk powder
1T kosher salt
1/2t baking powder
1/2 t baking soda
1/3c vegetable shortening

Mix yeast and water in mixing bowl, leave to bubble
Add rest of ingredients
Mix on low speed for 10mins
Prove in oiled bowl till doubles in size
Divide into 40g balls
Cover with plastic wrap prove for 30 mins
Bake at 150 for 10 min or till light golden color


500g beef mince
1t salt
1t black pepper

Place all ingredients in a bowl and mix well with your hands to make the protien's sticky
Roll out between wax paper to 1/2cm thick
Rest in fridge to firm up
Cut into squares a little bigger that the buns
Fry in hot pan till just cooked about 2mins either side


1c tomato paste
1/2c vinegar
1/2c sugar
1/4c Worcester
4T corn syrup

Place all ingredients in a heavy based sauce pan and melt all ingredients together over a low heat. Remove from the heat and let cool.
